Abstract: The aqueous enzymatic process of preparation of oil from Pistacia khinjuk was investigated. Pistacia kinjuk oil was extracted by aqueous enzymatic oil extraction under optimized aqueous extraction conditions using protease. The optimal processing conditions used for enzyme use in 10 g of Pistacia khinjuk seeds were as follows: hydrolysis temperature 50 C, pH 8.0, extraction time 18 h, and constant shaking at 80 rpm. Centrifuging the mixture at 10,000 g. For 20 min, the oil was separated with recovery of 47-52%.
